- One kilo of gizzards cleaned
- 10 fingers of plantain
- 1 onion
- 1 green bell pepper
- 1 chili pepper
- 2 tablespoons oil
- 1 tablespoon Penja black pepper
- 1 tablespoon powdered ginger
- Flavoured salt
Preparation
How to prepare a gizzard before cooking it
Start by removing the fat that covers it, then cut it in half
empty it of its contents inside you will find a yellow membrane of a rubbery appearance
Lift up this yellow membrane and get rid of it. Your gizzard is ready to be cooked. Generally, you will find it this way in the trade. Cut the gizzards into pieces the size of your choice. Coarsely crush the pepper and flavored salt and mix with the gizzards. Add the oil and the onion cut into strips. Pour water to the height of the gizzards. Bring everything to a boil and cook for 10 minutes. Meanwhile, dice the bell pepper. Peel the plantain and cut into rings. When the gizzards are ready, remove the pan from the heat, drain the gizzards and let them cool. Alternate on the gizzard, pepper and plantain skewers. In a bowl, mix the other tablespoon of oil, with 1 tablespoon of gizzard juice and a little salt. Brush the skewers with this marinade and cook on the barbecue or grill. Pour the remaining peppers and plantain into the gizzard juices, add the chilli and cook for 20 minutes. Add a little water if necessary. Pour this sauce over the ready gizzards. Serve and enjoy.
