Ingredients
- 1 chopped onion
- 2 tablespoons oil
- 4 tomatoes, peeled and diced
- 1 teaspoon tomato puree
- 300ml coconut milk
- 2 carrots, peeled and diced
- chili pepper
- flavoured salt
- 1 small piece of finely chopped ginger
- 1 bay leaf
- 300g long grain rice, washed and pre-cooked
- 200g of pre-cooked and chopped tuna
- 1 small green bell pepper, seeded and chopped
- 100 g green bean, cleaned and diced and pre-cooked
- 100 g chickpeas
- Mami Tiè Meat marinade
Preparation
Fry the onion in the hot oil in a large saucepan for a few minutes.
Add the tomatoes and tomato concentrate, cook over medium heat for 6 minutes, stirring occasionally.
Add 60 ml of coconut milk and cook until the mixture is reduced and thick.
Add the remaining coconut milk, peppers, carrots, chilli, ginger, bay leaf and salt.
Bring to a boil and add the rice and the remaining vegetables, stirring with a fork. Lower the heat, cover and cook until the rice has absorbed most of the liquid. Serve, you can accompany it with cooked meat as you please.
